Known officially as Saint Thomas of Villanova Church, this 18th-century cathedral boasts incredible Baroque-Romanesque architecture that uses limestone and even corals to create its distinctive yellow facade. Roberto’s serves some of the best in the country, with the perfect fluffy buns to encapsulate a wide variety of Chinese and Filipino fillings. The most popular are pork adobo, Chinese sausage, chicken adobo, and even bacon. Head to Calle Real for this casual soot for either a snack or put together a feast with your crew to sample every flavor on the menu.

If you’re trying to get the full experience, there’s simply no skipping Iloilo's batchoy, the savory soup that’s become the city’s calling card. You’ll find plenty of worthy shops serving up steamy bowls, but the quintessential spot is La Paz Batchoy, which has been the authority on the dish since it first opened in La Paz Public Market in the 1940s. Order a bowl with the meat of your choice and make sure to add a few puto steamed rice cakes to dip in the broth.
